Here are some of the best iOS 16.5 jailbreak tweaks I have found for the palera1n rootless jailbreak.
palera1n and Dopamine are both rootless type jailbreaks. Tweaks have to be updated to support rootless, so not many tweaks are compatible but devs are rolling out updates.

Checkl0ck
FaceID / TouchID for devices with checkm8 based jailbreaks. To jailbreak iOS 16.5 on my iPhone X I could not have enabled FaceID or Passcode, this tweak allows you to set and use them with palera1n.
Eliza
Make your battery colorful! This tweak colorizes the statusbar battery and battery widget rings based on battery percentage. See Eliza post here.
InstaLauncher 2
This tweak is a system wide application launcher. It allows you to swipe from the device edges to show a launcher of your choice.
Laetus
Laetus provides almost unlimited ways to customize the iOS Keyboard. The keyboard theme I’m using is by reb00t and has to be manually installed with Filza. reb00t keyboard here.
Filza
This is a complete file manager application, you can browse the entire file system of your iPhone.
SettingsRevamp
You can customize your Settings Application with this tweak. Organize your tweaks, add a banner image and much much more. See guide here
SnowBoard
This is a flagship tweak that let’s you theme your iPhone app icons, masks, effects, UI and more. The theme I am currently using is called 3DWorld.
Speedy
Speedy can speed up the animations of your device. I mostly use it for the app open and close animation as I think it’s a little too slow on iOS 16.5.
QuitAll
Multitasking app kill switch. You can quit all apps from multitasking. I mostly use this tweak for its power and respring options.
